Ayam Betutu/Balinese Roasted Chicken






ingredients:
source: kumpulan resep asli  Indonesia,
with slighly modification
1 whole chicken
cassava leaves or Kale 
4 kaffir lime leaves
2 bay leaves
1 lemon
banana leaves
aluminium foil

spice to grind:
10-12 chillies or about 200 g red chillies
100 g shallots
5 cloves garlics
5 candlenuts
1 tsp shrimp paste
2 cm ginger
2 cm lesser galangale (kencur)
3 cm galangale (laos)
2 cm turmeric
1 tbsp ground coriander
1/2 tsp pepper powder
1/2 tsp cumin
 1/2 tsp nutmeg powder
1/2 tsp cinnamon powder
3 tbsp tamarind juice ( 1/2 tsp tamarind dissolved in 100 ml hot water)
2 stem lemon grasses (take only the white part about 2 cm)
salt to taste
1 tbsp sugar
5 tbsp cooking oil

This looks really delicious. How interesting that you stuffed kale in the cavity of the chicken. All those spices and herbs made this dish stood up.
