Rempeyek/Indonesian Style Crunchy Peanut

Teh Niknik (Siti Wahyuni), my friend, is really kind to give me some rempeyek/Peanut Brittle and share the recipe to you. Thanks a lot. Rempeyek is so crunchy and tasty for snacks or to accompany your entree, e.g : Nasi Pecel (steamed rice served with cooked mix vegetables and peanut sauce). No doubt, it´s gone in a few minutes.



Ingredients:
400 g rice flour
100 g tapio
ca flour
peanuts, as required
4 kencur (kaemferia galanga), crushed
8 cloves garlic, crushed
4 candlenuts, crushed
1 tablespoon ground coriander
1 tablespoon s
alt
1 egg
1 can (400 ml) cocounut milk
900 ml water
5 lime leaves, finely sliced
cooking oil for frying

directions: combine all ingredients in a bowl and stir thoroughly. Heat the oil and fry the mixture over medium heat until golden brown on both sides. Drain on paper towel.

    I love rempeyek with peanuts and ikan bilis. Always get my maid to do it whenever come Chinese New Year.

    Sue sue: I´ll do the same thing if I were you. Since I´ve lived in Hamburg, I have to do it by my own. When we had Indonesian gathering, my friend is very kind to give me some rempeyek and sharing the recipe. We can find and buy rempeyek easily at "Toko Indonesia", Hamburg. But, Homemade Rempeyek is the best.

  15. yolla: kayaknya sih kalo kacang yg dari dose itu sepertinya udah matang, kalo di goreng lagi nanti kacangnya apa nggak gosong duluan, mungkin lho ya..belum pernah nyoba :)

  17. abis ngeliat foto rempeyek di blognya mbak arfi, jadi pengen bikin. mbak, nuang adonannya ke minyak gimana ya? maksudnya biar si kacang pada gak lepas... apa perlu dituang diirus dan beserta si irusnya digoreng ampe rada kuning?
