Onbijtkoek

kbb11-Onbijtkoek

Hmmmm... I love the smell of spices in the whole of my kitchen when the cake was baked..... . It´s quite easy to make and yummy, though without butter or margarine in the recipe.
KBB (Indonesian Baking Club) this month challenge: Onbitjkoek

source: Kue-Kue Indonesia. Yasa Boga-PT Gramedia Jakarta, 2007
Recipe in Bahasa Indonesia: see hereingredients:
125 g palm sugar/coconut sugar (me: coconut sugar/gula jawa)
5 egg yolks, 3 white eggs
125 g all purpose flour, 1 tsp cinnamon (kayu manis), 1/2 tsp ground nutmeg (pala), 1/4 tsp ground cloves (me: 7 cloves/cengkeh).
50 g kenari/canarium indicum ( me: sliced almond)
Onbijtkoek
directions: Preheat oven to 150°C. In medium bowl, combine flour, ground nutmeg and ground cloves. Cream eggs and palm sugar using electric mixer (me: about 10 minutes) until stiff and fluffy.Add flour mixture and mix until well combined. Pour batter in prepared pan (I use 20x30 cm cake tin). Sprinkle top with sliced almond. Bake about 20 minutes. Cool completely and then cut into pieces.

Looks good! I'm printing this recipe too since it has no butter/oil used. I guess I can substitute the gula jawa with brown sugar right?
