Urap, cooked mix vegetables with hot and spicy grated coconut, are used to serve as an accompaniment to Nasi Kuning (yellow rice) or Nasi Uduk. This is one of traditional Indonesia cuisine known for its combination of contrasting flavors (spicy, sweet and hot).
vegetables: Bean sprout, carrots, water spinach, string beans or you can use whatever you like
for hot & spicy grated coconut :
200 g kokosraspel/dry grated coconut or fresh grated coconut
3 hot red chillies
3 clove garlics
1 teaspoon terasi/belacan/shrimp paste
sugar and salt, as desired
4 cm lesser galangal
3 lime leaves
one glass (200 ml) of water
directions: Boil the vetagetables separately in water for 3 minutes, except the beans sprouts just pour boiling water over them then rinse all vegetables under water tab and drain in a colander.
for hot&spicy grated coconut: grind all of spices except lime leaves. Place the ground spices in a sauce pan or frying pan and pour some water. Simmer grated coconut and stir well until the water absorbed by coconut. Remove from the heat. Sprinkle the grated coconut mixture over cooked vegetables. Serve with nasi kuning or nasi uduk or as salad itself.
