Cobek Ikan Nila-Grilled Tilapia with Hot&Spicy coconut milk sauce


I´d like to collect and try my friends´recipes that I´ve already tasted it, of course recipes from my mother too. My dear friend, mbak Dewi Kuraesin, brought this grilled Tilapia when we had an Indonesian gathering. It´s so spicy and delicious. Today, I tried her recipe by my own. Mbak Dewi Kuraesin, thanks for sharing the recipe.

Ingredients:
1 kg Tilapia fish
1 tablespoon tamarind juice
165 ml coconut milk
3 tablespoons cooking oil

Spices to grind:
4 - 5 red chillies
6 shallots, grilled
6 clove garlics, grilled
6 candlenuts, fried
1-2 cm kencur/kaemferia galanga, grilled
1 cm ginger, grilled
1 tablespoon palm sugar
salt, as desired

directions: Grill or bake the fish in the oven in a preheated moderate oven 180°C for about 30 minutes. Smear the fish with margarine both upper sides when it´s half cooked. Meanwhile prepare the sauce. Heat the oil in a sauce pan then saute grinded spices until fragrant. Stir in coconut milk, tamarind juice and salt to taste. Bring the sauce to the boil then simmer over the lowest possible heat until thicken. When the fish is cooked, place it in a serving dish. Pour in the sauce over the fish. At this point you can stop the cooking or bake it again for 10 minutes. It will deepen in flavour if you do. Serve with rice.

Wah serasa di rumah makan Sunda...hihihi! Waktu saya makan di Bumbu Desa di Bandung, saya ada pesan cobek gurame. Penampakan-nya ya persis kaya foto tilapia-nya mbak Retno. Ikan-nya aja yang lain. Uenak banget...apalagi kerasa terasinya...:)
