Cream Cheese Fruit Cake


Cream Cheese Fruit Cake
(source: Cakes and Slices Cookbook, Australian Consolidated Press)
ingredients:


90 g margarine (retno: 100 g butter)
125 g cream cheese (me: 100 g cream cheese)
2 teaspoons lemon zest (kulit lemon) I omitted this
175 g caster sugar (me: 125 g)
2 eggs
125 g sultanas (me: 100 g)
125 g raisins (I don´t use more raisins. Sultanas and raisin are family, aren´t they?)
100 g currant, finely chopped (me:100 g succade)
150 g apricots (me: 100 g prunes)
150 g maraschino cherry , divided by 4 (me: 50 g)
75 ml brandy ( substituted with juice of 1 orange)
100 g all purpose flour (me: 200 g all purpose flour+2 tsp baking powder+1/2 tsp baking soda)
75 g self raising flour ( I omitted this)



directions: soak dried fruits into orange juice. Cream butter, cream cheese and sugar together until fluffy. Add eggs, a little at a time, beating well between each addition. Sift the flour, baking powder and baking soda together and fold into the mixture. Add fruits. Turn the mixture into the prepared loaf tin. Bake in a preheat oven 150°C-160°C for about 1 1/2 hours. (note: after 30 minutes baking, cover the tin with aluminium foil then continue to bake).

Mmm...nyam-nyam. Jadi tergoda pengen bikin. Kebetulan punya persediaan krimcis. Tapi bahan2 yg laen mesti dibeli dulu. Fotonya cakep, Mbak.

Mbak Retno, ngedekor kue pake fondant bakal bikin ketagihan loh. Tapi sih ini menurutku ya, yang kebetulan gak gitu seneng ngedekor pake buttercream (belepotannya itu loooh). Nanti aku bikinin tutorial ilmu-ilmu yang aku dapet ya, Mbak :).

oiya, aku bbrp hari lalu sempet bikin banana bread, ihiks... kok gak mirip roti kayak yg Mbak Retno bikin, sedih deh

itu udah percobaan kedua loh Mbak, yg pertama malah berhasil..
