Kale/Gründkohl, considered to be one of the most highly nutrious vegetables with powerful antioxidant properties, is very high in beta carotene, vitamin C, lutein and zeaxanthin and reasonably rich in calcium (source: Wikipedia).
What and where antioxidant can be found here.
I planted the seeds of Gründkohl/Kale in my little garden on March´07. Today, one of great joys is to pick the leaves and cook them in my kitchen. I just feel good! I made easy and fast Gründkohl-Beef Curry by using Instant curry seasoning mix. The taste of Gründkohl/Kale is almost similar with Cassava leaves or called daun singkong in Bahasa Indonesia.
Ingredients: 500 g beef,
gründkohl/Kale, as required
2 onion, finely sliced
3 cloves garlics, crushed
1 stalk lemon grass
4 lime leaves
4 cm galangal
3 bird eye chillies, finely sliced
2 sachets (2x50 g) oriental curry
1,5 l water
400 ml coconut milk
4 tablespoons cooking oil
directions:Boil beef and 1,5 l water until tender. Saute garlic, onion and sliced chillies until fragrant. Add into the broth followed by 2 sachets Indofood instant seasoning Mix for oriental curry, lime leaves, lemon grass, galangal, gründkohl and coconut milk. Stir well and let them simmer for about 5 minutes. Served hot with steamed rice.
